my thoughts on denver after a year here:
- the people remind me of seattle
- soooo many dogs 🐾
- it honestly doesn't snow that much
- the food is better than expected (even the seafood)
- the mountains are pretty but far away
- fall goes hard 🍂
- love the brick and victorian houses
- i'll take san diego weather over four seasons
- lots of cute neighborhoods & nearby towns
- gas is cheap ⛽
- not a fan of the 2 inch hail & severe thunderstorms
- don't tell visitors about the altitude 😂

located in longmont, sit in the time capsule (aka the historic bank vault) for a private dining experience for up to 4! or in one of their other dining rooms, each with a different vibe.

their global cuisine aims for sustainability & carbon neutrality, with many of the ingredients coming from local farms.

stop by roots next time you're near longmont!

✨ BAKED PULLED PORK MAC & CHEESE ✨ [#sponsored]
serves four

Ingredients:
8 oz @zenb_life gluten-free penne pasta
2 cups leftover pulled pork
1 cup sharp cheddar, shredded
1 cup smoked gouda, shredded
¾ cup heavy cream
¾ cup water
2 tbsp butter
2 tbsp flour
1 tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp paprika
¼ tsp ground mustard
¼ tsp black pepper

1. Preheat the oven to 400° F.
2. Boil salted water with a dash of oil. Add a box of ZENB penne and cook for 7 minutes (2 minutes before al dente).
3. While noodles cook, melt butter in a saucepan on medium heat and whisk in 2 tbsp of flour to make a roux.
5. Slowly whisk in ¾ cup of heavy cream and ¾ cup of water.
6. Add ground mustard, salt, pepper, paprika, garlic powder, and onion powder.
7. Reduce heat to low and add shredded cheese while stirring.
8. Stir continuously until smooth and thickened.
9. Drain pasta and place in a large oven-safe dish.
10. Add half of pulled pork to the pasta dish.
11. Remove sauce from heat and pour on top of the pasta. Mix gently with a wooden spoon.
12. Add other half of pork to top of dish and sprinkle some cheddar cheese on top.
13. Bake for 15 minutes & serve with barbecue sauce!
